More than 90 percent of the 200 batches he had made over the years were produced on the homemade equipment–although now the mash tun has been retired after some unsuccessful modifications a few years back. You may now know Ray as the founder of the highly successful Cicerone Program which certifies and educates beer professionals.

Dark as night, the Shallow Grave Porter is the perfect beer choice for a cool, dark evening. This a big Porter with complex flavors of rich chocolate and caramel followed by a touch of warmth and a light malt sweetness that will leave you ready for the next shovelful.

Used whiskey barrels are popular… really popular.  5 and 10 gallon barrels usually sell out quickly when they become available.  They are also typically relatively expensive.  These used staves are a great way to get some of the barrel experience without the cost and space required for a barrel.

from AIH…”These sliced staves do vary in size. They are anywhere from 1/2”- 1″ wide, 1/8″-1/4″ thick and 8-13″ in length. Please keep this in mind when purchasing. Many commercial chips have allowed moisture (bourbon) to dry up. This is not the case with these sliced staves. These staves have been processed from authentic Kentucky bourbon barrels.”
