Barebottle Brewing Companys Torcido Mexican Style Lager from MoreBeer:
The most compelling stories always have a twist. Barebottle’s award-winning Torcido is a Mexican pilsner with a German Helles twist. Combining these styles results in a light and refreshing lager that would make even M. Night Shyamalan do a double take. Originally developed by Barebottle brewer John “Magic” Montes, Torcido took gold in the 2019 Great American Beer Fest and in turn became the inaugural inductee into the Viking Malt Hall of Fame. Brewed with Viking Pilsner, flaked corn, a dash of Carahell®, and hopped with two additions of Crystal and Saaz.
Barebottle Brewing Company was born in San Francisco, CA with the idea that craft brewing shouldn’t adhere to the strict guidelines of established beer styles. Founded by a trio of friends and former classmates, they continue to pay homage to their homebrewing roots by printing a scaled down version of their recipe on every label. If you ever see one of their creations out in the wild, we highly recommend that your buy it, drink it, and then brew it!
Check out this week’s Kit of the Week! – remember coupon code KOTW
Note that this is a Brewmaster Series Recipe Kit – The recipe is a direct collaboration with the brewer.

Northern Brewer’s Ferocious IPA Recipe is a clone of Surly Furious IPA
About Ferocious IPA from Northern Brewer:
If you can handle a huge hop slap in the face, then pour a pint of our Ferocious IPA. Crafted in honor of a massively popular IPA of the upper Midwest, this brash IPA uses 6 ounces of awesome hops for a bold brew that’s barely balanced by a backdrop of toasty, caramel-y malt. It’s a fizzy yellow beer drinkers worst nightmare, a hophead’s dream, and a smooth full bodied brew so full of flavor you’ll wish you’d have brewed more!
Brewing Notes
Tasting Notes
Brad’s Notes:
“Yep, we did it again, another IPA. This time around we present a recipe modeled after a massively popular IPA brewed in the upper Midwest, and this is no ordinary hop bomb one-trick pony. Ferocious IPA is very well balanced between unmistakeable malt richness and undeniable hop presence. The groundwork of highly flavorful base malts provide deep, delicious malt notes of fresh crusty bread, while modest doses of crystal malt and light roasted barley provide this recipe’s complex malt depth and characteristic red-amber color. With a simple early hop addition for bracing bitterness, the end of the boil is where all the magic happens. A combination of Simcoe and Amarillo® hops are employed over the last 15 minutes of the boil to boost flavor with notes of resinous pine, fresh flowers, citrus fruit and a faint tropical fruit subtlety. All of this magic is then capped off with yet more Simcoe and Amarillo® in the dry hop, but also features the special guest Ahtanum to bolster the aroma with wafts of intense grapefruit citrus. Dive into a pint of Ferocious and join us up in the Bold North.”
About Surly Furious from Surly Brewing Co:
The beer that built Surly. Aggressively hopped and citrusy, but with a chewy, caramel backbone.
Surly is called “Surly” due to our inability to find a good beer in town. Furious is one of the first beers we brewed to rectify that situation. The rest is history.

Brewing Eclectic IPA: Pushing the Boundaries of India Pale Ale by Dick Cantwell
More Info
From the book description, check product page for current description, price and availability:
As a diverse but distinctive style, IPA bestrides the craft beer world like a colossus. As author Dick Cantwell says, “We are living in the heyday of IPA.” While hops remain front and center in the myriad examples of IPA available to beer drinkers today, the style is also now subject to vast experimentation and “dressing-up,” producing fruity, herbal, black, Belgian-y, and juicy versions of this perennial favorite. Brewers are pushing the boundaries of IPA by using flavors from cocoa, coffee, tea, fruits, vegetables, spices, herbs, chilis, and wood.
Before describing how this multitude of ingredients can best be applied to crafting unique, eclectic, and tasty IPAs, Cantwell gives a potted history of IPA, acknowledging some of the fanciful notions the story often includes. When he arrives at craft brewing today, Cantwell opens up whole new vistas where experimentation can happen, involving spices and herbs of all kinds, fruits from every corner of the globe, vegetables familiar and not-so-familiar, coffee and chocolate, teas and botanicals. Along the way, he describes his thoughts behind his approach and how to treat these ingredients with free license while still being conscious that the aim is to produce something delicious that people will want to drink again.
Brewing Eclectic IPA will inspire professional and homebrewers alike to explore the creative ways in which these ingredients can be used in brewing highly hopped beers. Try your own version using any of the 25 recipes for contemporary IPAs that the book contains, designed by some of America’s top brewers.

amazon115th Dream Hopbursted Imperial IPA was a kit that at one time was offered by Northern Brewer. It’s no longer available so here’s the recipe.
I brewed this back in October of 2011 and it was the most hop forward beer I’ve ever brewed and maybe the most hop forward beer I’ve ever had. There are loads of hops in this beer! In fact… 1 lb of hops in a 6 gallon beer. Although nearly all NB kits are 5 gallons, this one was scaled to 6 gallons to compensate for the volume lost to the massive amount of hops.
The recipe relies on a Hopburst Blend that is no longer available. There’s a forum discussion of this back in 2011 and someone sites the Promash analysis that was published listing equal parts Cascade, Crystal, East Kent Goldings and Warrior.
More About 115th Dream Hopbursted IPA:
One pound of hops (yeah, a pound of hops), 9.2% abv, IBUs in the neighborhood of 120, BU:GU ratio of 1.2:1. Hopbursting is a technique that contributes a significant percentage of a beer’s total bitterness through late additions, which as a byproduct creates a psychedelic amount of hop aroma and flavor. This kit uses enough ingredients to brew at least four session beers. If you serve this beer to a Michelob Ultra drinker, he or she will cry. If life were a 1950s horror flick, this I2PA would climb out of the fermenter and turn on its master. Your dentist does not want you to brew or drink this beer. Sorry in advance about your tooth enamel.

From About Hazbro from MoreBeer:
Bro down with a Hazy IPA that is amped with the tastiest neomexicanus hop on the scene. Sabro™ is well-known for its strongly expressive character that imparts complex fruity and citrusy flavors. Charging forward with tangerine, coconut, tropical fruit, and stone fruit aromas with an undertow of cedar, mint, and cream. From About Haze Craze from MoreBeer:
Haze Craze is our take on the hazy North East IPA, also known as New England IPA or Juicy IPA, it is one of the fastest growing beer styles in the US. The style accentuates hop character while maintaining a smooth and creamy mouthfeel. Light in color but hazy due to heavy dry hopping, yeast selection, as well as additions of oat and wheat . Low in bitterness with a huge hop character due to hop-bursting, this beer will satiate even the biggest hop head.
The North East IPA has become popular nationwide thanks to breweries like Tree House Brewing, The Alchemist, Hill Farmstead and Grimm Artistanal Ales. After my first taste of this delicious style, I knew that brewing it at home was a must.”

Back around 2014. Wil Wheaton of Star Trek The Next Generation fame got into homebrewing. At that time he partnered with Northern Brewer to release two recipe kits. Since Wil has apparently stopped homebrewing as his homebrew website is currently closed. Northern Brewer has also dropped his kits from their lineup. I have both the all grain and extract versions that I can share with you.
