L09 QUE BUENO – SEASONAL STRAIN – IMPERIAL ORGANIC YEAST

More Info

From the product description, check product page for current description, price and availability:

For producing a fine Mexican-style cerveza, look no further than Que Bueno! Once part of Imperial Organic Yeast’s standard lineup, this yeast is back as a seasonal strain for a limited time only! Que Bueno is a yeast that is perfect for the production of a range of Mexican lagers, from Corona-style light cervezas to rich Vienna Lagers in the style of Negro Modelo. In fact, this yeast has an assumed origin from a famous Mexican brewery with a similar name! This yeast has a low ester profile, meaning it can create crisp, clean beers without a lot of fruitiness that can finish dry. It has medium flocculation and attenuation properties. A must for a true-to-style Mexican lager of any kind!

ICE PACK INCLUDED
We include complimentary ice packs with ALL liquid yeast orders (if required), but cannot guarantee that the ice packs will stay cold during transit, and thus the yeast can potentially be exposed to hot temperatures. We highly recommend ordering dry yeast during the hot summer months or if you are ordering from a warmer climate. Many times during the winter an ice pack is not needed so we make the determination based on current temperatures and the destination!

YEAST SPECIFICATIONS
Temperature Range: 47-55 F
Flocculation: Medium
Cell Count: 200 Billion
Attenuation: 73 – 77%
Alcohol Tolerance: 8%
Typical Styles: Mexican Cerveza, Mexican Lager, Pilsner, Vienna Lager, Dark Lager

Finalist, BEST BOOK, International Association of Culinary Professionals
With fantastical narratives, home-brewing instructions, and original craft cocktail recipes, Mead is the ultimate exploration of the resurgent alcoholic beverage that is nearly as old as time itself.

Beloved by figures as diverse as Queen Elizabeth and Thor, the Vikings and the Greek gods, mead is one of history’s most storied beverages. But this mixture of fermented honey isn’t just a relic of bygone eras — it’s experiencing a cultural renaissance, taking pride of place in trendy cocktail bars and craft breweries across the country. Equal parts quirky historical narrative, DIY manual, and cocktail guide, Mead is a spirited look at the drink that’s been with us even longer than wine.

Mead gives readers a fascinating introduction to the rich story of this beloved beverage — from its humble beginnings to its newfound popularity, along with its vital importance in seven historic kingdoms: Greece, Rome, the Vikings, Poland, Ethiopia, England, and Russia. Pairing a quirky, historical narrative with real practical advice, beverage expert Fred Minnick guides readers through making 25 different types of mead, as well as more than 50 cocktails, with recipes from some of the country’s most sought-after mixologists.

Mead Science starts off with a brief synopsis on mead, the meadmaking process, and all the equipment needed to ferment, bottle, and keg mead. It then dives in to the biology and chemistry of yeast, nutrition, nutrition protocols, mead additives, honey and sugar, and all of the chemical compounds that make mead what it is. This book also includes chapters on developing mead recipes using standard ratios and explains some of the science behind pairing mead with food. Mead Science is the book for everyone who has wanted to know why exactly they do the things they do when making mead. If you have ever wanted to know why yeast need nutrients, why some meads taste like nail polish, and why fermenting at cooler temperatures results in more aromatic meads, then this is the mead book for you.
