Why Gluten Free?

A notable percentage of people have some motivation to reduce or completely eliminate gluten intake.  Reasons vary from dietary choice to gluten sensitivity to serious medical conditions including auto-immune diseases like Celiac Disease.  This may describe you or a friend or family member.

Eckert Malting Naked Rice Malt

Naturally gluten free product malted in a dedicated gluten free facility. Produces gluten free beer. Use Amylase Enzymes to convert starches into sugars which can then be fermented by brewing yeast.

Premium quality non-GMO California rice germinated then dried with minimal roasting. Replaces pale barley malt for gluten free beer. Enzyme activity is lower than barley. Suggest use of bacterial alpha enzyme for more efficient mash.

This “naked” rice malt is dehulled leaving just the rice grain behind. May be used with other hulled rice malt or the appropriate amount of rice hulls to ensure circulation and filtration. The use of “naked” rice malt reduces the amount of rice hulls in the grain bill and may increase the potential gravity.

Potential Gravity: 1.020-1.022 or 20-22 gravity points per gallon.
Diastatic Power: Maximum Range 20-35 Litner; Average Range 20-25 Litner.
Grain/Hull Ratio: 100% Grain; recommend using with 15% Rice Hulls
