      Hey Anthony! I think the thing at play here is the fact that the carbonation stone is down in the liquid. That means what co2 goes into solution it creates movement in the beer. That movement, although slight is enough to keep the carbonation process rolling. I used to doubt that this really made much of a difference until a buddy of mine started a nano brewery. He can carbon a 2 BBL batch in relatively short order. I was perplexed by this until I saw the position of the stone and thought about what kind of movement that could cause. Same results as if you would slowly shake the keg over a 24 hour period.
